So yesterday Tyler & I went to Barnes(& Nobles) and he was reading his book and I was reading through a bunch of cooking books... Yes, I know I sound like such a wife haha I've always loved watching cooking shows & thought it was so intriguing how people could be so creative with food. What's even more impressive is when they make it taste good & make it healthy at the same time. I love creativity and really appreciate it when I see it. I love getting new ideas and experimenting with cooking. I am by no means an amazing cook, but I hope to someday be one. I am more like a work in progress. But anyways as we were sipping on our drinks(Green Tea with lemonade,yumm) we started to talk about health & brainstorm and we got on the topic of a fitness bootcamp. And whats so funny is that my best friend Kami sent me a link on facebook today about two girls(appear to be best friends) who do alot of fitness related things and she wrote," Just thought about this being us, just a thought." And it got me so excited and got my brain just spinning with ideas. I mean how fun would that be.. Be looking out for a possible 1 day fitness bootcamp with Elisha & Kami coming soon : ) In the meantime enjoy the yummy recipe below that I found yesterday. I'm trying it tonight so I'll let you know what the best food taster around thinks.. my husband!
Sweet Potatoe Fries
1 large sweet potatoe (about 8 ounces)
2 teaspoons olive oil
1/4 teaspoon salt (kosher or sea salt)
1/4 teaspoon black pepper
1/4 teaspoon ground red pepper
Preheat oven to 350 degrees. Lightly spray baking sheet with cooking spray. Combine sweet potatoe, oil, pepper, salt and ground red pepper on baking sheet, toss to coat. Arrange potatoe slices so they are not touching. Makes: 2 servings
Bake 45 minutes or until lightly browned Protein: 2 g Total fat: 5 g Carbohydrate 23 g
