Goodbye Illinois, hello new journey...


My husband and I are moving to Davenport, Iowa!! Starting March 2012, Tyler will be attending Palmer Chiropractic College to be a chiropractor : ) He is starting this month taking an online class and will be taking a couple other prerequisites in November until our new journey begins. Were really excited to be taking a step of faith and I am so proud of him for pursuing his dream!!! He is very determined, passionate and goal oriented so I have complete faith that with God & me by his side he's going to do so great.

I can do all things through Christ who gives me strength. Philippians 4:13

I can't help, but be thrilled about getting a new house to make into our home and a fun new blank canvas to decorate! I love love decorating! And I couldn't of picked a better month to move- October!! O yay, I cannot wait for the delicious scents, the perfect crisp air, the changing colors of the trees & of course fall treats!!

      

God is so good and I am just so thankful for his leading in this new direction in our life and all the blessings that have came our way. I look forward to encouraging my husband & being his helper during school & taking some time to reflect on what God has planned for us.

Sweet Potatoes and Apples

Ingredients
  • 1 – 2 tablespoons butter
  •  ¼ c all natural 100% apple juice
  • 1 medium-large sweet potato
  • 1 – 2 apples
Directions:

 Peel and thinly slice the sweet potato. You can leave the slices round or cut them into a half moon shape.

Thinly slice the apple (keep peel if desired).

Melt the butter over medium heat in a sauté pan that has a tight fitting lid.

 Throw the prepared potatoes into the pan and cook while stirring for a few minutes.

Add the apple slices and cook for another minute or two.

 Keeping the heat on medium, pour in the apple juice, put on the lid, and steam until the liquid has almost evaporated. It should only take another couple of minutes. 

Add some cinnamon to add some spice & serve warm.
